1. You’re mixing the batter too much.
Those small lumps you see as you start to mix? They’re just fine to leave as is. In fact, having batter that’s been mixed too much is actually worse than having batter that seems like it wasn’t mixed enough. The reason for this is that as you continue to mix, more gluten develops, which ultimately results in pancakes that are tough to chew.
2. You’re not giving the batter enough time to rest.
We know that no one wants to wait to start cooking, especially when you have a house full of hungry people, but being impatient will lead to an unsatisfied stomach. Once your ingredients have been mixed together, you need to let it all sit for at least five minutes (sometimes, it could be as long as 30 minutes) so that the gluten can rest for a bit, and so that the starch in the flour can absorb any liquid and thicken things.
3. You’re pouring oil directly onto the pan.
Pouring oil directly onto the pan results in the one thing no one wants – unevenly cooked pancakes. That’s because it’s much more likely to pool up in certain spots of the pan this way, compared to what happens when you spread the oil evenly using a power towel.
4. You’re letting the pan get too hot.
It’s all about temperature! Yes, you want your pan to be hot enough to get things going, but if it’s too hot, your pancakes are going to start to burn on the outside before the inside even has a chance to cook.
5. You’re flipping your pancakes way too soon.
You should flip when the bubbles start to form in your batter, right? WRONG! For perfect pancakes, you are supposed to flip once the bubbles have burst in the center. And, don’t forget, you’re only supposed to flip ONCE. If you flip constantly, you’re going to wind up with deflated pancakes that aren’t as fluffy as you would have hoped they’d be.
